All of the CSS files that are installed by the Mobile Entree Base Feature have a naming convention that looks like this: [Style/Core].[CSS Supported Version].[Generation].css. This provides granular support for devices without having to fall back to the lowest common denominator.
The Style.css styles define colors, images and borders that are used by the elements rendered to the device. This is the starting point for rebranding your application. If you are just rebranding the Base Plugin, you can modify these style files using SharePoint designer. If you are creating your own styles for an application, you can include them in a supplimental file to overwrite the OOTB styles. For information on supplimenting and overwiting OOTB resource, have a look at UserAgentMapping.xml.
These files are all located inside the __entree__/inc folder on the site you have the Mobile Entree Base Feature activated. All of the OOTB styles have a comment at the top that explains their usage. Some common things you can change by modifying these styles are background color or images, icon to use for the link arrow and menu bar styling.
